Green Tomato Bread


Note: My first reaction to this bread was "green tomato bread ???!!!" But it is really an amazing recipe. Very moist and flavorful!

Beat together eggs, sugar, tomatoes, salt, oil, and flavorings. In a separate bowl, sift together flour, baking soda and baking powder. Add the dry mixture to the wet, stirring until incorporated. Stir in the spices, nuts and food coloring. Pour into loaf pans and bake at 350 degrees about 1 hour.

Note* I add the red food coloring to give the bread a nice light brown color, similar to zucchini bread.

NOTE* You can substitute 1/2 of the flour with whole wheat flour. It gives it a slightly different texture and a darker color. Then I do not add any food coloring. It is still very moist & delicious.
