Zucchini Pancakes


Mix all together shortley before cooking time (about 10 - 20 minutes). This will allow enough time for flavors to blend. If mixed too early the mixture will get watery. Drop by spoonfulls onto hot griddle. Serve with maple syrup and/or sour cream.

NOTE: I like to use parsley, chives, dill and/or basil. Fresh or dreid herbs work equally well.
